Ingredients:
750 g fresh sardines
100 g breadcrumbs
50 g raisins
50 g pine nuts
6 salted anchovies
parsley
bay leaves
extra virgin olive oil
salt and pepper
Preparation:
Soak the raisons in lukewarm water for 15 minutes.Wash the sardines, split them open lengthwise, but without cutting all the way through. Remove the central bone and the head, and allow the sardines to drain well. Put the oil in a frying-pan along with ¾ of the breadcrumbs, brown them and put them in a bowl. Add the raisins (drained and squeezed dry), the pine nuts, the parsley and the finely chopped anchovy. Mix together and spread the mixture on the sardines and close them up again.Oil an oven-proof dish, put in the sardines and add a few bay leaves. Sprinkle with the breadcrumbs and drizzle on a little oil. Place in the oven at 180° C for 30 minutes.
