Ingredients:
800 g peeled shrimp
1 bouquet garni containing thyme, bay leaves and chervil
paprika
2 glasses of single cream
1 glass of dry sherry
100 g butter
salt
peppercorns
Preparation:
Put the bouquet garni and 3 peppercorns into a pan of water and bring to the boil. Lower the heat, add the shrimp and cook for 30 minutes. Drain.
Melt the butter in a frying pan, add the shrimp and the paprika. Pour in the sherry and cream and let the liquid reduce for a few minutes. Add salt to taste. Serve hot accompanied by pilau rice.
