Pear dumplings

Ingredients:
250 g superfine flour
150 g butter
2 eggs
2 tablespoons of milk
1 tablespoon of sugar
4 pears

Preparation:
Peel the pears, remove their cores and put a knob of butter in their place; put in the oven at 250° C for 10-15 minutes.
Make a fairly firm dough with the flour (mixed with 100 g butter), a tablespoon of sugar, a beaten egg plus the white of the other one, and a tablespoon of milk. Make this dough into a ball and allow to rest for at least 1 hour; then divide it into 4 portions and roll it out thinly. Put a pear in the centre of each sheet of dough and wrap it round it, pressing delicately with dampened fingers. Brush with an egg yolk diluted in a little milk. Put in the oven at 200° C for 20- 30 minutes.
