Coffee custard

Ingredients:
1/2 l milk 
3 egg yolks 
1 tablespoon of sugar 
1 tablespoon of flour
1 tablespoon of freeze-dried coffee

Preparation:
Beat the egg yolks; add them, stirring well, to the (sieved) flour and the sugar. Pour this mixture into a saucepan, add the coffee and and keep stirring over a very low heat: do not allow it to boil, or the cream will curdle. Pour into coupe glasses and serve warm or cold, with amaretti (macaroons).
